Black Pepper

Originally from India, pepper is grown in Brazil, Indonesia, Malaysia and India. It only grows in very hot and humid climates. There are different types of pepper on the market: white, black and green. They come from different stages of ripening of the fruit. White pepper is at the most advanced stage of ripening while green pepper is not ripe. The spicy taste of pepper is mainly due to a substance called piperine.

For black pepper, the fruit is picked at half maturity. As they dry, the berries turn black and wrinkle. It is the strongest and most aromatic pepper. It is used whole, crushed and ground, more or less finely. Crushed, it is used as a coating for smoked meat.
