Mustard Seeds

Originally from the Mediterranean basin, mustard is grown in Canada, Europe, the United States and India. There are about 40 species; the most common of which are black, white and brown mustard. The spice comes from the seeds, except in the case of brown mustard, which comes from a green vegetable whose leaves are used as spinach. Brown mustard is believed to be the result of the hybridization of a type of cabbage plant and black mustard. White mustard has a bitter and less spicy taste than the other varieties. Black mustard has a very spicy taste because it contains a high amount of essential oil. Whole seeds, among other things, are used to flavour marinades. Ground, they are used to prepare ham. Ground mustard powder has functional properties that are used in the binding of delicatessen products.
