
Mace
Nutmeg and mace are two spices produced on the island of Grenada and in Indonesia. They come from the same tree, the nutmeg tree. Mace and nutmeg are two distinct parts of the fruit. Mace consists of a thin orange-coloured woody membrane which surrounds the nut. The nutmeg itself is the nut inside the membrane. The nut is dried and crushed so it can be released from the shell. Mace and nutmeg are used in delicatessen and in ready-made meals. Mace has a scent and odour similar to that of nutmeg. It has a slightly sweet aromatic taste and a cinnamon flavour. The colour of mace changes from orange yellow to brown during drying.
