Bay Leaves

Bay leaves are grown in warm regions with a maritime climate, such as Italy, Greece, France and Spain. They have a balsamic, hot and bitter taste, which limits its use. They have a good flavour at the beginning of cooking and is particularly suitable for shellfish. Bay leaves seem to sweeten salty dishes. An essential oil is also extracted from its leaves.
