Anise Seeds

Originally from the Eastern Mediterranean countries, anise is grown in Spain, Turkey, Mexico and Egypt. All parts of the plant have the typical anise smell. However, it is primarily the seeds that are used in cooking. They are used whole, such as in cooked pepperoni, or ground, in Arab and Indian dishes. Green anise pairs very well with cinnamon and nutmeg.

Star anise is grown mainly in China and Vietnam. Its star-shaped fruits taste like anise. Its flavour is less pronounced than that of green anise, because its peppery flavour masks it. However, it keeps its aroma longer.
