Allspice

Allspice is grown mainly in Jamaica, but also in Brazil, Honduras and Guatemala. It is sometimes incorrectly referred to as Jamaican pepper. Its taste is a mix of cloves, cinnamon, nutmeg and pepper. The tree produces fruits the size of peas that are picked green and then dried. This is how they become brownish. Allspice can easily be used to replace cloves. It is used to flavour both savoury and sweet dishes.
