Cinnamon

It is grown mainly in Asia, where it is believed to be from, but also in Indonesia, the Seychelles, Madagascar, the Caribbean and Brazil. There are several varieties of cinnamon that are more or less similar. Cinnamon comes from the bark of the cinnamon tree. It is harvested in thin layers and dried. During drying, the bark rolls up on itself to give the sticks found on the market. There are also the bark chips that are used for grinding. Cinnamon has a distinctive sweet and slightly spicy flavour. It is widely used in pastry making. It is also used to season marinades and meats. Along with nutmeg, cloves and pepper, cinnamon is one of the four basic spices used in delicatessen. It is also used in the composition of curry.
