Sodium erythorbate has the same antioxidant properties than ascorbic acid but it has no value in vitamins. The quantity of sodium erythorbate you need to add in the product is usually less than what you would need to add if you used ascorbic acid. That is because sodium erythorbate is stable and has a prolonged reaction. The doses to use can vary from 200 to 500 ppm in salted or fresh meats and in cooked or raw charcuterie products.
