
Green Pepper
Originally from India, pepper is grown in Brazil, Indonesia, Malaysia and India. It only grows in very hot and humid climates. There are different types of pepper on the market: white, black and green. They come from different stages of ripening of the fruit. White pepper is at the most advanced stage of ripening while green pepper is not ripe. The spicy taste of pepper is mainly due to a substance called piperine.
For green pepper, the berries are picked before maturation. On the market, you can find dried green pepper as well as peppercorns pickled in vinegar or in brine. It has a delicate and slightly fruity flavour. It is used in marinades and as a decorative element on pâtés and terrines.
