There are several varieties of garlic. Like onion, garlic can be found fresh, as an extract, or dehydrated. Fresh garlic is highly fermentable, especially when it has sprouted. It is important to keep it in a cool, dry and well aerated place. For dehydrated garlic, moisture should be carefully monitored during storage. One kilogram of dehydrated garlic is equivalent to five kilograms of fresh garlic.
