Celery Seeds

Several parts of the celery plant are eaten. The seeds are harvested depending on the stage of development of the plant. The first year, the 40 to 50 cm leaves, called celery stick, are harvested along with swollen roots known as celery root. The second year, after the plant flowers, small brown seeds are harvested. They have a warm, hot and bitter taste. It is these seeds that constitute the spice as such. In spice mixes, they enhance the flavour of other spices. Whole or ground seeds are used in marinades, stuffings and especially in meatloaf or mock chicken. Celery salt, a mixture of ground celery seeds and salt, is widely used in Quebec to enhance the taste of a wide variety of foods.
