Turmeric

Turmeric is a rhizome or underground stem more or less yellow depending on the variety. Originating from Indonesia and Malaysia, it is grown in tropical countries such as China, Costa Rica, India and Peru. Known for its dyeing power, turmeric dyes as much as saffron, but its taste is different. It is also known as “Indian saffron”. It has a strong, penetrating, intense and spicy smell, and a slightly more bitter taste than ginger. It is used in curry and mustard, and goes well with Asian dishes and poultry. It does not withstand cooking, which tends to blacken it. In an acidic environment, it becomes reddish. It does not go well with ginger.
